Vin Bin

Ok, so I really shouldn't be doing this, but I was so excited about my experience that I had to share. I recently attended a wine and cheese pairing course taught by Rick Lombardi and left there full of good wine and even better cheese. Rick runs a little shop in Marlboro, MA called The Vin Bin and it's fabulous in every way. I tried a lot of European cheeses that I never thought I'd ever try. One of them was a cheese called Robiola and it's made from cow and sheep milk. It comes from Piedmont, Italy and it smells like raw oysters mixed with raw sewerage..Yes, I'm serious..But as all cheese connoisseurs know, the stinkier the cheese, the better. Then I also tried my staple, goat cheese. Anything with goat cheese is delicious, so I was thrilled to be trying TWO different kinds. My favorite of the night had to be the 7 year aged Cheddar. Delicious! Then to top it all off, try mixing these cheeses with marmalades, such as Pear & Honey, Fig, Blueberry and Apricot. I may have to pay a visit to Mr. Lombardi shortly and have a wine and cheese party of my own..The Vin Bin also offers wine tastings every Friday night and cheese tastings daily. I will be incorporating all I learned about wine and cheese pairings into my tasting events! Remember, stinky cheese equals good cheese!!
